100% Carignan. From the 2018 vintage, 2,800 bottles of 75 cl and 30 Magnums embedded in wood boxes were produced, all of them numbered.
Blend of 2 Carignan estates located in Vilamaniscle, all of them bush trained and between 80 and 100 years old with predominant slate mineral soils. Production less than 500 kg / ha.
Manual harvest in boxes of 20 kg and vineyard selection at the optimum time of phenolic ripening.
Pre-fermentation maceration for 2 days. Each variety is fermented individually in stainless steel tanks of 1,500 to 2,000 liters with a combination of pigeage and gentle pumping. Selection of yeasts and controlled fermentation temperature. Post-fermentation maceration for 3-4 days. Spontaneous malolactic fermentation.
Aged in 225L and 300L French oak barrels for a minimum of 12 months.
Minimal clarification and filtration processes. Rest in bottle of 6 months.
Intense cherry color, bright, thick, glyceric and elegant. Varietal complex aroma: figs, black fruit, leather and spices. Minerality in the mouth, very well polished and wide tannins, well integrated wood, long mouth feeling with balance.
