Grapes from two grenache vineyards where the less productive parts and with more exposure to slate land are selected. Both plots are located in Rabós at a height of about 200 m. Double-guyot driving system. 20 year old vineyards with an ecological certificate by the CCPAE.
Manual harvest in boxes of 20 kg and vineyard selection at the optimum time of phenolic maturation of each variety. Elaboration in stainless steel tanks of 1,500 to 2,000 liters. Selection of yeasts and controlled fermentation temperature for each variety. Pre and post-fermentation maceration. Combination of pigeage and comebacks.
Aged in 225L and 300L French oak barrels for a minimum of 12 months. Minimal clarification and filtration processes. Rest in bottle of 6 months.
Cherry color cherry middle layer, bright and glyceric. Complex aroma with jams, licorice, vanilla, strawberry, cherry and blackberry. Hints of low forest and a lot of minerality. In the mouth, a feeling of fresh acidity that combines with very well polished tannins. Remarkable structure, balanced with very well integrated and very sweet wood.
