Syrah (40%), Syrah (40%) and Carignan from very old vines (20%). From the 2019 vintage, 1,500 bottles and 30 Magnums were produced.
Manual harvest in boxes of 20 kg and vineyard selection at the optimum time of phenolic ripening of each variety. Vineyards are in Vilamaniscle and Rabòs d’Emporda with some of them in process of conversion to organic. All vineyards are trained in a double-cordon royat system.
Pre-fermentation maceration for 2 days. Each variety is fermented individually in stainless steel tanks of 1,500 to 2,000 liters with a combination of pigeage and gentle pumping. Selection of yeasts and controlled fermentation temperature for each variety. Post-fermentation maceration for 3-4 days. Spontaneous malolactic fermentation.
Aged in French oak barrels for a minimum of 12 months. Minimal clarification and filtration processes. Rest in bottle of 6 months.
Intense cherry color, bright, glyceric and elegant with a lot of color intensity. Complex aroma with jam, rose, plums, raspberry, orange and licorice. Hints of underbrush. In the mouth a feeling of fresh acidity that combines with very well polished tannins. Remarkable, balanced structure, with well-integrated wood. Essence of the territory.
