Grapes from different properties over at least 20 years old vineyards. Manual harvest in boxes of 20 kg and vineyard selection at the early hours of the day.
Once at the cellar grapes are directly pressed and then racked. After alcoholic fermentation in stainless steel tanks of 1,500 to 2,000 liters for 20-30 days at 14-16ºC. Yeast selection and controlled fermentation temperature.
