Manual harvest in boxes of 20 kg and vineyard selection. Early harvest during the first hours of the day to preserve freshness and low graduation and with aromas of very fresh fruit.
Once at the cellar grapes are directly pressed and then racked. After alcoholic fermentation in stainless steel tanks of 1,500 to 2,000 liters for 20-30 days at 14-16ºC. Yeast selection and controlled fermentation temperature.
Once fermentation is finished wine is kept with its lees during 3-4 months.
Salmon color. Notes of fresh red fruit, white stone fruit, aniseed, white pepper. In the mouth, refreshing acidity, with volume and presence.
